You know what they say: suns out, buns out. At every summer gathering, we see hamburgers and hot dogs galore. But what about the sides? Nothing kills the party faster than a salad from a bag. Luckily, our kale quinoa salad brings the five star flavor without the hassle. All you’ve gotta do is toss the kale and quinoa into the oven, and whip up a quick dressing while it bakes. And just like that, you’ve got a crispy cruciferous treat, added protein from the quinoa, and drizzled in a sweet, yet acidic lemon vinaigrette dressing. Plus, our easy vegan salad wouldn’t be complete without our Unsweetened Plain Dairy-Free Yogurt Alternative, made from the same coconuts we use for our Organic Coconut Water. It adds the perfect tang that brings the homemade vinaigrette dressing to life.
What You'll Need
For the Kale Salad:
- 1 cup quinoa, cooked according to package instructions
- 1 bunch dinosaur kale, de-ribbed and finely chopped
- Olive oil
- Kosher salt
- ½ cup sliced almonds (also called flaked almonds)
For the Creamy Honey Lemon Vinaigrette:
- ½ cup Harmless Harvest Unsweetened Plain Dairy-Free Yogurt
- ¼ cup olive oil
- ¼ cup lemon juice
- 2 tbsp honey or maple syrup
- ¼ tsp kosher salt, plus more as needed
- ¼ tsp black pepper, plus more as needed
- Pinch of garlic powder
How To Make It
- Move your oven rack to top, preheat oven to 450°F, and line two baking sheets with parchment paper. Prep quinoa and kale.
- Add cooked quinoa to one baking sheet and kale to other baking sheet. Drizzle both quinoa and kale with olive oil and a generous sprinkle of salt. Massage kale until it’s decreased slightly in volume and toss quinoa until each grain is coated with olive oil.
- Bake kale and quinoa in preheated oven for 8 minutes on top rack, then remove kale (it should be crispy but still have some bite) and set aside on counter. Crank oven temperature up to 500°F and continue to cook quinoa for additional 10-15 minutes or until crispy and golden brown. Make sure to stir quinoa 2-3 times when it’s baking to ensure it cooks evenly. Highly recommend tasting quinoa each time you stir it, as it gets crispy fast, and you don’t want to overcook it.
- While quinoa bakes, make salad dressing. In a large glass, add in all vinaigrette ingredients using a whisk. Whisk until emulsified and creamy, about 1 minute. Adjust vinaigrette for salt.
- Add baked kale, quinoa, and almonds to a large serving bowl. Pour over a generous amount of dressing (depending on your preference) and toss to combine. Serve immediately!
