The Recipe Card
Ok so you’ve probably seen a million instant pot chicken recipes, but we promise you have never tasted one this delicious. Jasmine rice and chicken thighs are cooked in a bath of our Organic Coconut Water, and Organic Coconut smoothie infusing every bite with delectably creamy coconut flavor. But that’s not all; the rice and chicken simmer together with a perfect blend of aromatics (lemongrass, galangal, and lime leaves) imparting more flavor than should be legal for a recipe coming out of an instant pot.
After about an hour in the instant pot, remove the chicken (checking for doneness), and season your rice with lime juice and cilantro. If you have the cilantro ‘soap gene’ feel free to omit, and please accept our deepest condolences. Taste one last time to see if additional seasoning is needed and serve with your favorite veg, or a simple salad. Aren’t you glad you dusted off your instant pot?
What You'll Need
- ½ cup Harmless Harvest Organic Coconut Water
- 1 cup Harmless Harvest Organic Coconut Smoothie
- 3 cups of Jasmine rice
- 5-6 chicken thighs
- 2 stalks of lemongrass
- 3-4 slices of galangal
- 3-4 lime leaves
- 1 cilantro bunch
- 4-5 limes
- 2 tbsp salt and pepper (adjust to your liking)
How To Make It
1. Prepare (clean, cut or slice) lemongrass, galangal, lime leaves, and chicken thighs.
2. Rinse and clean Jasmine rice.
3. In an instant pot, add cleaned Jasmine rice, herbs, chicken, salt and pepper, ½ cup of Harmless Harvest Organic Coconut Water, and 1 cup of Harmless Harvest Organic Coconut Smoothie.
4. Set instant cook setting to slow cook on instant pot. Cook for about an hour or adjust cooking time according to your servings.
5. Remove the chicken. Add juice of 4-5 limes and cilantro to the rice and mix well. Taste test rice to determine if another pinch of salt should be added.
6. Serve it with a side of your favorite greens and some extra lime!
