For the Muffins (Makes 24)
- 2 cups rolled oats
- 4.4 oz Harmless Harvest Unsweetened Plain Dairy-Free Yogurt Alternative
- 1/2 cup melted coconut oil (use refined coconut oil if you don’t want your muffins to have a strong coconut flavor)
- 2 eggs
- 2 tsp vanilla
- 1/2 cup sugar
- 1 tsp baking powder
- 1/4 tsp sea salt
For the Crumb Topping
- 1/2 cup packed brown sugar
- 1/2 cup oat flour
- 4.5 tbsp cold butter cut into chunks (we used plant butter)
- 1.5 tsp ground cinnamon
How to Make ItThe Coffee Cake Crumb Muffins Recipe
- Preheat the oven to 350 degrees.
- 2To your blender, add all muffin ingredients and blend until your batter is smooth. Make sure coconut oil isn't too hot when added to the blender so eggs don’t cook before they are blended.
- To make crumb topping, cut cold butter into chunks and add to a bowl with the rest of the topping ingredients. Using your hands, bring the mixture together into a sandy texture with some bigger chunks remaining.
- Scoop batter into greased mini muffin tins and top with crumb mixture.
- Bake at 350 degrees for approximately 15 minutes. Let cool and enjoy!
