A traditional Green Goddess filling is spooned onto savory puff pastry tarts, before being topped with dollops of our dairy-free coconut yogurt alternative. Finished with lemon zest, and crumbled crispy prosciutto- this tart is a treat fit for the gods!
 
If the gods and goddesses you’re entertaining are non-meat eaters, or you just want to lighten things up, simply omit the prosciutto and top with your choice of toasted nuts or any topping your heart desires. Enjoy!

 

What You'll Need

For the Filling
  • 1 head of garlic
  • Juice of half a lemon
  • 2 cups of spinach
  • 2 cups of basil
  • 1 small shallot
  • 1½ cups Harmless Harvest Unsweetened Plain Dairy-Free Yogurt Alternative
  • 2 scallions, greens only
  • Salt to taste
For the Egg Wash
  • 1 egg
  • 1 tsp water
For the Assembly
  • Lemon zest
  • 0.5 oz prosciutto
  • 2 sheets of puffy pastry

How To Make It

1. Preheat oven to 400°F.
2. Trim 1/4 inch off top of garlic bulb. Place garlic on a piece of foil, cut side up, and drizzle with oil. Wrap in foil and roast for 40 minutes or until cloves are a deep brown or tender. Let cool.
3. On a parchment paper-lined baking sheet, lay out prosciutto slices with no overlap. Bake at 400°F for 9-11 minutes or until crispy. Allow to cool and crush up into small pieces using your hands or a mortar and pestle.
4. Squeeze out roasted garlic and add to a blender along with spinach, basil, juice of half a lemon, shallot, scallion greens, ½ tsp of salt and Harmless Harvest Unsweetened Plain Dairy-Free Yogurt Alternative. Blend until smooth and add more salt to taste.
5. Roll out each puff pastry sheet and cut into 6 equal squares. Puff pastry should be slightly thawed, but still cold. Cut a ½ inch border along each side of puff pastry square, stopping about ¼ inch before cuts intersect. End result should be two 90-degree angles.
6. Take two corners of square and fold one corner over the other, while folding other corner under. Gently pull on it so it lines up to the edges of opposite corners. Press down to flatten. Using a fork, prick the center multiple times. Repeat with rest of puff pastry.
7. In a small bowl, mix an egg and 1 teaspoon of water. Brush egg wash on edges of all puff pastry diamond shells.
8. Bake puff pastry shells at 400°F for 10-15 minutes or until golden brown. Allow to cool before adding filling.
9. Spoon 2 tablespoons of green goddess filling to each puff pastry shell. Optional: place equal parts of Harmless Harvest Unsweetened Plain Dairy-Free Yogurt Alternative and green goddess filling into a piping bag. Pipe out small dollops of filling on top of green goddess-filled tarts. Finish with freshly grated lemon zest and crushed prosciutto. Enjoy immediately!
