It’s luscious and creamy thanks to our dairy-free coconut yogurt and copious amounts of Parmigiano Reggiano, while the addition of pesto and lemon zest keeps it bright and herbaceous for a truly delectable dish. If store-bought is not your thing (go off kitchen queen/king), feel free to whip up your own batch of pesto, but we find that cuts into our pasta eating time. You can easily swap out the chicken for your protein of choice to further customize this easily adaptable recipe! Have fun with it, but most importantly: enjoy!
WHAT YOU’LL NEED
- 4.4 oz cup of Harmless Harvest Unsweetened Plain Dairy-Free Yogurt Alternative
- 2 tbsp avocado or olive oil
- Chicken breast, cut into cubes
- Salt
- Black pepper
- 1 tsp Italian seasoning
- 1/4 cup pesto
- 1 tsp lemon zest
- Parmigiano Reggiano cheese, grated
- Pasta, cook per package instructions
- 1/4 cup pasta water
- Red pepper flakes
HOW TO MAKE
- In a large pot, bring water to boil and cook pasta per package instructions. Reserve 1/4 cup of the water for sauce.
- To a skillet on medium high heat, add 2 tbsp oil. Add cubed chicken breast. Season with salt, black pepper, and Italian seasoning. Cook chicken until browned and fully cooked.
- Add pesto, lemon zest, Harmless Harvest Unsweetened Plain Dairy-Free Yogurt Alternative. Stir and lower heat to low.
- Add grated parmesan cheese and reserved pasta water and stir. The sauce should be creamy.
- Once pasta is cooked, drain and add it to sauce and stir. Top with more parmesan cheese and red pepper flakes.
