Creamy Coconut Shrimp Risotto (The Perfect Excuse To Host A Dinner Party)

While it's true that school may be starting back up, and some mornings may have the slightest hint of autumn’s crispness just around the corner, but we promise you there is still plenty of summer left. And what better way to celebrate than by making this delectable coconut fried shrimp risotto. Actually, scratch that. The best way to celebrate what’s left of summer is by hosting a dinner party where you can impress your friends with this shrimp and risotto recipe that is guaranteed to blow their minds.

Making risotto is a labor of love, but to make things feel less laborious and more love-y try sipping on a cocktail while you stir. It’s the perfect end of summer recipe sure to please any crowd, a deliciously satisfying comfort meal when you need it, and a really solid addition to your gluten free dinner recipes file. This recipe takes a little more time in the kitchen, but the result is a delectable dish that tastes like sunshine and the hazy lazy days of summer’s end.

This delightful dish is an update on a classic coconut rice, made in the style of risotto. Instead of the usual broth used in traditional risotto recipes, this gluten free and dairy-free recipe relies on our Organic Coconut Smoothie to make this dish impossibly creamy and luscious without the dairy, as well as packed full of creamy coconut flavor. This dish is best served with friends, on a rooftop patio if you can find one. Cheers to another successful summer!

What You'll Need

For the Creamy Coconut Risotto
  • 1 cup arborio rice
  • 1 tbsp unrefined coconut oil
  • 1/3 cup shallots, minced 
  • 2 (10 oz) bottles Harmless Harvest Organic Coconut Smoothie
  • 2 cups water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Coconut Fried Shrimp
  • 1 lb shrimp, tail on, peeled and deveined
  • 1 cup unsweetened coconut shreds
  • 2 eggs, scrambled with ½ tsp garlic powder
  • 1 cup coconut flour
  • Unrefined coconut oil, enough to cover bottom of skillet to fry shrimp

How To Make It

1. Cover shrimp completely with coconut flour, then egg, then coconut shreds
2. Fry in unrefined coconut oil over medium high heat until crispy 
3. Add coconut oil to a separate skillet over medium heat 
4. Add minced shallots and sauté for 3 minutes 
5. Add rice and continue sauté for 3 minutes while stirring rice to prevent burning. Increase heat to medium high for another 3 minutes. 
6. Add 1 bottle (10 oz) Harmless Harvest Organic Coconut Smoothie and continuously stir for 5 minutes. Then, reduce heat to medium. 
7. Add ½ of second bottle (5 oz) Harmless Harvest Organic Coconut Smoothie and stir for 5 minutes 
8. Add ½ cup water every 5 minutes and continuously stir for 3 rounds (water should be fully absorbed each round)
9. Add ½ tsp salt and pepper and final ½ bottle of Harmless Harvest Organic Coconut Smoothie and continuously stir for 5 minutes 
10. Add final ½ cup water (30 min total cook time so far) and continuously stir
11. Remove from heat and continuously stir for an additional 5 minutes (40 min cook time total and should be al dente!) 
12. Plate and enjoy!
