Even if you can’t track down some Girl Scouts, we’ve got you covered with this sweet and easy breakfast recipe. Unlike other cinnamon rolls, this recipe doesn’t rely on yeast, so it comes together quickly with some seriously delicious ingredients. The star of the show dough is our Harmless Harvest Plain Dairy-Free Yogurt Alternative. Our unsweetened coconut yogurt makes for a tender dough ready in just minutes. Mix your filling and roll it up! What You'll Need
For the Dough
- 1 cup Harmless Harvest Unsweetened Plain Dairy-Free Yogurt Alternative
- 1⅓ cup self-rising flour or all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
For the Filling
- 2 tbsp melted butter
- 3 tbsp brown sugar or monk fruit
- 1 tsp cinnamon
- ¼ tsp vanilla
- ½ cup toasted coconut
- ½ cup chocolate chips
For the Peanut Butter Caramel
- 2 tbsp coconut oil (melted)
- 3 tbsp maple syrup
- ¼ tsp vanilla
- Pinch of salt
How To Make It
- Stir dough ingredients in a bowl until combined. Add more flour as needed if mixture is too wet. Form into a ball and then transfer to parchment paper. Spread out evenly in a rectangle shape.
- Mix the filling ingredients and spread evenly on top of the dough. Add toasted coconut and chocolate chips evenly.
- Carefully roll up dough. Cut into 4 pieces, gently pressing down on each to flatten slightly. Bake at 325°F for 15 min.
- Mix peanut butter caramel ingredients in a bowl until combined.
- Serve with peanut butter caramel drizzle and top with melted chocolate and toasted coconut.
