- Basil
- Sun dried tomatoes
- Arugula
- Farro
- Harmless Harvest dairy free yogurt alternative, plain
- Olive oil
- Garlic
- Lemon
- White beans
- Salt + pepper
How to Make:
Garlic Yogurt Sauce

1/2 cup Harmless Harvest Dairy Free Yogurt Alternative, Plain
- 1/4 cup olive oil
- 2 garlic cloves
- juice from 1/2 lemon
- 1/2 tsp salt (adjust to your preference)
- 1/2 tsp pepper (adjust to your preference)
Salad

1 bulb fennel – finely chopped
- 1 cup basil – finely chopped
- 1 8 oz package sundried tomatoes – roughly chopped
- 3 cups arugula
- 3 cups cooked farro
- 1 can white beans – drained
- salt/pepper to taste
Combine
- Add yogurt sauce ingredients to a bowl and mix until smooth. Set aside.
- Add all salad ingredients to a large bowl. Toss to combine.
- Pour salad dressing over salad and mix until combined.
