How to Make Vegan Italian Farro Salad Recipe

What You'll Need:

  • Fennel 
  • Basil 
  • Sun dried tomatoes 
  • Arugula 
  • Farro 
  • Harmless Harvest dairy free yogurt alternative, plain
  • Olive oil 
  • Garlic 
  • Lemon 
  • White beans 
  • Salt + pepper 

                      How to Make:

                      Garlic Yogurt Sauce

                      1. 1/2 cup Harmless Harvest Dairy Free Yogurt Alternative, Plain 

                      2. 1/4 cup olive oil 
                      3. 2 garlic cloves 
                      4. juice from 1/2 lemon 
                      5. 1/2 tsp salt (adjust to your preference) 
                      6. 1/2 tsp pepper (adjust to your preference) 


                      1. 1 bulb fennel – finely chopped 

                      2. 1 cup basil – finely chopped 
                      3. 1 8 oz package sundried tomatoes – roughly chopped 
                      4. 3 cups arugula 
                      5. 3 cups cooked farro 
                      6. 1 can white beans – drained 
                      7. salt/pepper to taste 


                      1. Add yogurt sauce ingredients to a bowl and mix until smooth. Set aside. 
                      2. Add all salad ingredients to a large bowl. Toss to combine. 
                      3. Pour salad dressing over salad and mix until combined.
